Newk’s Eatery opening Feb. 25

Newk’s Eatery, which Restaurant Business Magazine recently named “America’s Favorite Fast-Casual Chain,” will open its first restaurant in Chattanooga Monday, Feb. 25, at 2380 Lifestyle Way. This franchise marks Newk’s 14th restaurant in Tennessee, growing its footprint to more than 120 restaurants.

“We take a hands-on approach to every meal and go the extra mile to get the finest ingredients,” says Michelle Spohnholz, vice president of marketing at Newk’s. “We take pride in the details – cooking with house-roasted garlic and house-infused olive oils, as well as hand-chopping 20 fresh produce items daily.

“Our founder Chris ‘Newk’ Newcomb develops our scratch-made recipes, which come from the Newcomb family and have been perfected over generations.”

Every meal is prepared to-order in an open-view kitchen. The menu offers grilled and toasted sandwiches, more than a dozen salads, kettle-batch soups and hand-rolled pizzas for lunch and dinner.

Prime ingredients are used for every dish, including petite tenderloin steak, Atlantic salmon, all-white meat chicken breast and sushi-grade ahi tuna, Spohnholz says. In addition, all premium cuts are hand-sliced, flame-grilled and house-marinated.

Newk’s also owns its own bakery, making signature Dozen-Layer Cakes every day with flavors like strawberry, caramel and chocolate.

The centerpiece of the Newk’s dining room is The Roundtable, which offers free premium garnishes, including imported pepperoncini, Torinesi-style breadsticks, grated Parmesan, housemade croutons, and bread-and-butter pickles, along with seasonal features like toasted garbanzo beans.

Newk’s also features an iced tea bar with fresh-brewed Rainforest Alliance Certified iced teas: unsweet, sweet, sweetened with Splenda and a seasonal brew.

The 4,550-square-foot restaurant in Chattanooga will accommodate 187 guests. Located in a retail shopping development anchored by a Publix Grocery Store and Embassy Suites Hotel, the newly constructed location features a large patio overlooking scenic water.

Williams Food Group, led by president and CEO Paul Williams, will operate the restaurant. This opening marks the group’s third, with additional locations in Smyrna and Kennesaw, Georgia.

“I first visited a Newk’s at the recommendation of my brother, who used Newk’s Eatery to cater lunch at his client’s offices,” Williams says. “I was so impressed with the fresh ingredients and spacious, open concept that I set up a meeting with the corporate team and signed on to be a franchisee within weeks.”

Newk’s in Chattanooga will be open Monday through Sunday, 10:30 a.m.-10 p.m. The restaurant also features online ordering and mobile app (skip the line) options.
