Kay's Cooking Corner




Most everyone I know is watching his or her weight. Not excluding - moi. This past week, Don and I went on a short excursion to Richmond, Virginia. The Jefferson Hotel was highly recommended, so that is where we ended up staying. It is a grand old hotel erected in the late 1800’s and reminds me a lot of the Peabody in Memphis.
For the most part, we ate quite healthy. Don had some type of baked fish on two different occasions, and even ate what he considers “under-cooked’ green beans. (Meaning that, they were crisp and still bright green, instead of dull and soft.) He made me so proud!
I usually try to eat healthy. I don’t eat too much fried foods, and not much meat, other than chicken and pork. So, all in all, I think we did pretty good.
One thing that I did see on the news while I was there, however, was a little gadget that rates a foods nutritional value. I have forgotten the name of it, however, if you scan the barcode of the food item, it computes the information, and rates it based on health value, i.e, if scanning an apple, it will rate it as a 9 or 10, but a cookie is 1 or 2. Go figure…
I have also read that all these new little apps coming out for your iPhone, iPod, Droid, iPad, etc., with the idea of making you more healthy, can in fact, make a person obsessive about calories and fat, and feel like a failure.
I found that article a few days after two of my favorite young ladies sat on my couch going over what they ate, how many calories, how much fat, how much exercise, blah, blah, blah – and entering in the information so the app could compute it and tell them if they were good or a bad! Hum-m-m… personally, I do enough things wrong during the course of the day to have my iPhone telling me I have been bad and don’t know how to eat. And one more thought before I get off that subject – to all of my girls, you are very lovely, very healthy, and beautiful! This is coming from your “Mother App”!
Well, I know I have had several articles on peaches lately, but I have one more to share with you, before the fresh peach season closes up. This is a yummy and creamy fresh peach cobbler. I found this on the Eagle Brand website. It gives you several options on using different kinds of peaches (canned or frozen) but maybe you can make it while the fresh ones are still available. If you use reduced fat Eagle Brand milk, 2-percent milk and don’t overeat… this will be healthy!
Creamy Peach Cobbler
Crisco original no-stick
cooking spray
1 (14 oz.) Can eagle brand
sweetened condensed milk
2 teaspoons lemon juice
1 cup plus 2 tablespoons
Pillsbury Best all-purpose
flour
4 cups sliced fresh peaches
1/4 cup sugar
2 teaspoons baking powder
3 tablespoons Crisco
all-vegetable shortening
1/3 cup milk
Cinnamon sugar mixture
Heat oven to 350 degrees. Coat 9x9-inch baking dish with no-stick cooking spray. Combine the sweetened condensed milk, lemon juice and 2 tablespoons flour in large bowl. Stir in peaches, then spread evenly in prepared pan. Bake 15 minutes. Meanwhile, mix 1 cup flour, sugar, baking powder and shortening in large bowl with a fork until crumbs form. Stir in milk. Place teaspoonfuls of dough over hot peaches, covering the top of the surface. Sprinkle with cinnamon-sugar mixture. Bake 35-40 minutes or until peaches are fork tender and top is golden brown. Cool 20 minutes before serving.
Variations: use 4 cups of sliced, frozen peaches, or one (29 oz.) Can sliced peaches, drained.
